From: PoetSunshine Sent: 10/15/2008 10:07 PM Zucckina Bread 2 cups shredded zuccina 3 cups all purpose flour 1three forths cups sugar of splenda. 1 teasp. baking soda 1 tsp. salt 1tsp ground cinnamon one forth tsp. baking powder three forth cup applesauce one half cup substitute eggs or 2 eggs, one third cup vegestable oil. 1 teasp vanilla Peel and scoop out seeds of zuccina, then shred. you may freeze zuccina until ready to use but press the water out before freezing& measure the 2 cups. Place zuccina on several sheets of paper towels. Cover with extra towel and let stand 5 minutes, pressing down occasionally. Combine flour and next 5 ingredents, make a well in the center of the mixture combine zuccina, applesauce, eggs, oil, & vanilla. add to dry mixture stirring just till moist. divide batter evenly in two loaf pans coated with pam spray. Add dry raisens and chopped nuts in desired. Bake at 350 1 hour and 15 minutes (Enjoy)
