Squash Casserole 1Large green pepper 1 large onion Chop up and saute in olive oil or margarine. about 1 quart of squash, if they are frozen let them thaw out and drain. Cook the squash until tender, do not cook until they are mushy. Add onion and pepper, one can rotel tomatoes, add about 1 cup bread crumbs, that have been crushed in a food processor. The bread crumbs adds thickness. Spray casserole pan and pour in ingredients. cook about 40 minutes and add shredded cheese and let them melt. This is the way she gave it to me over the phone and it is good. Esther.
